The Skeleton Key Series is a new set of small batch single origin offerings from Brass Ring Coffee. These are coffees that we find to be special or "abnormal" in some way or another. Some of these coffees may come from special farms, use experimental processing techniques, unique typicas, or just have an extremely special flavor or character. "Natural process coffee is often referred to as the more traditional method. This is the way coffee was processed long before machines came into play and often to aid farmers when access to clean water wasn’t readily available. Once the cherries are picked, they are then placed in water to float. After this, each cherry is carefully inspected so that under-ripe and overripe fruits can be removed. Coffee is then placed on raised beds, known as patios. These beds are used to allow air to flow around the entire fruit and help offer a more even drying process.
This drying process can take anywhere from 3 to 6 weeks. During this time, however, the coffee is turned or raked several times per day. This helps the cherries dry more evenly and even safeguards against the possibility of bruising which can change the eventual taste of the coffee. Once the fruits are completely dry, they are then sent out for hulling. This is where the seed is removed from the fruit. After hulling, the final step in the process is dry milling or removing the skin from the seed. When all of these processes are complete, the seeds are sent to roasters."
"Coffee grows in eight coffee regions throughout Costa Rica. In the central and northern highlands where most specialty coffee is found, coffee grows from 1200-1700 meters. Ninety percent of Costa Rican coffee is grown by 50,000 farmers on less than 5 hectares. Although nearly all Costa Rican coffee is wet milled, the country produces a wide variety of honey processed coffee. Coffee is dried using both patios and mechanical dryers. Costa Rica grows Typica, Caturra, Catuai, Villa Sarchi, Bourbon and Gesha. "
