Hello.
This is Brass Ring Coffee. Small batch, seasonal coffee roasted by a person right here in the heartland- Iowa City, IA.


Our goal is to produce coffees that are loud, fun, interesting, and hopefully thought-provoking. Take a look around, hopefully you will find something that speaks to you. We take a lot of inspiration from horror movies and punk rock- we keep things simple and stick to what works. We let our coffees tell their own story without trying to overpower them using aggressive roast profiles or added flavors. Above all we try to keep things fun.

Cascara means “peel” or “skin” in Spanish, and is made from the dried fruit (“cherry”) of the coffee bean. While very popular in other areas of the world, it is fairly new in the United States. Cascara has a tart, yet sweet flavor that somewhat resembles cherries, though it is more similar to apple cider or tamarind. You can drink it as is, or add a cinnamon stick or a couple of cloves. In hot weather try making it as an iced tea and dropping in an orange wedge!


This fruity infusion has caffeine (about 1/4 of the amount in a cup of coffee) plus antioxidants and vitamins, making it a natural energy drink.

Mountain Water Process coffees are decaffeinated using pure spring water from Pico de Orizaba, the highest mountain in Mexico. Each batch of beans is steamed to create a green coffee extract, which is passed through a filter to remove only the caffeine content, then re-introduced to the green coffee. This process retains all the flavor and nuance inherent to the green coffee while removing 99% of the naturally occuring caffeine, all without the use of chemical additives or solvents."

The Skeleton Key Series is a new set of small batch single origin offerings from Brass Ring Coffee. These are coffees that we find to be special or "abnormal" in some way or another. Some of these coffees may come from special farms, use experimental processing techniques, unique typicas, or just have an extremely special flavor or character. You can always count on a Skeleton Key coffee to transport you to somewhere special when you close your eyes to take the the first sip.

"This Zambian lot is an anaerobic natural. Anaerobic fermentation is a borrowed processing method from the wine industry, in which the whole grapes are fermented for a few days without direct contact of oxygen before mashing into grape juice for fermentation. In the coffee industry, cherries are enclosed in a tank, and the tank is tightly sealed to prevent the entry of oxygen.

 

With the high initial water activity and sugars in the fruit pulp, yeast fermentation leads to the production of metabolites that initiate the production of unique aroma compounds during roasting.


Kateshi coffee estate, as one of the first coffee estates in Zambia, was established in 1972 close to Kateshi village. Back then, its wet processing facilities represented the heart of coffee production in northern Zambia having been the central mill for all coffee produced in the region. It is also award-winning; its natural and honey placing both 1st and 2nd in Zambia's annual Taste of Harvest competition.


Local Community is at the heart of the estate's vision. Covoya provides daily access to safe drinking water to over 20,000 locals and supports 3 schools that provide 1,500+ students with primary and secondary education. Also on site is our health clinic, the only such facility for 30km. Complete with a pharmacy and delivery room, the clinic provides free basic healthcare to over 4,000 community members and sees an average of 95 visitors per day.


Kateshi has been recognized for boldly challenging gender stereotypes in Zambia, being the first and only coffee estate to employ women for traditionally male-dominated roles such as driving tractors, bull-dozers and road graders."
